Eggplant salad

Ingredients:

                 5 pcs. regular size eggplant
                 2 pcs. regular size carrots
                 1 pc.  regular size ginger
                 1 pc. regular size onion
                 1 cup cane vinegar
                 3 Tbsp sugar

Procedure:

                  1.) boil the eggplants til cooked. Set aside/ let it cool
                  2.) slice the carrots, ginger, onion into cube size
                  3.) Peel the eggplants and put them in a bowl.
                  4.) On a separate bowl mix the cane vinegar and sugar and carrots, ginger and onions. (sweet                                 and sour sauce)
                  5.) Finally, arrange the eggplants in a bowl and pour in the mixed sweet and sour sauce.

ampalaya salad

ingredients:

                 2 pcs. regular size ampalaya
                 1 pc.   regular size carrots
                 1 pc.   regular size ginger
                 1 pc.   regular size onions
                 1 pc.   pineapple tidbits budget pack  * optional
                 1 cup  cane vinegar
                 3 Tbsp.  sugar

PROCEDURE:

                 1.)  slice ampalaya into thin bite size.  Put salt and leave it for 15 minutes.
                 2.)  slice carrots, ginger, onions into small cube sizes
                 3.)  On a bowl, mix 1 cup cane vinegar and 3 Tbsp sugar ; add cubed onions and ginger, carrots
                 4.)  Wash the salted ampalaya.
                 5.)  Mix the amapalaya and the sugared vinegar with carrots and ginger.  The taste must be sweet                         and sour.  Then add pineapple tidbits without the juice.

What's the best part of Iligan you would be proud of?

         Iligan City, my hometown, is a  highly urbanized city in the province of Lanao del Norte, Philippines.  Before, it was part of Central Mindanao (Region 12) and now under Northern Mindanao (Region 10).  Iligan City has a total land area of 813.37 km2 (314.04 sq mi), making it one of the 10 largest cities in the Philippines in terms of land area. It has an estimated population of 322,821 inhabitants as of 2010.

           Iligan City is made made up of flat cultivated coastal land, volcanic hills, and mountains with waterfalls and cold springs.  Of its approximately 20 waterfalls, MA. CRISTINA FALLS is the grandest, that which supplies hydroelectric power to a large part of Mindanao.The area's climate is not extreme or excessive. Moderate climate helps people sustain their lifestyles and daily activities. People in the City never worries about typhoons.  Rain falls evenly in the place. 

           People in Iligan City is mostly Catholics, and just a small percentage of Maranaos and lumads.  Most of them speak Cebuano language.  There are also Tagalog Speaking as well as English speaking immigrants from different parts of the Philippines and other countries.  It is a home rich in natural resources and industries.  Also, a home rich in mix cultures of Maranaos of lanao del Sur, Higaonons of Bukidnon, and many settlers and migrants from other parts of the country.  It is known for its diverse culture.

          Of all the beautiful places or shall we say tourist spots of Iligan City,  the BEST part of Iligan I will be proud of is the National Power Corporation (NPC) Nature Park – a nature park within a hydroelectric power plant.  It has varied plants and animals, as well as adventure activities which you can enjoy during an entire day.




 






















           It's really fun to be with nature!  :-)  We enjoyed our day having picnic and see the wondrous, grandest waterfall of Iligan City.  Hoping to get there some time again soon!
